Eggplant salad with yogurt, sautéed spinach and crispy chickpeas – Ingredients
- 2 eggplants
- salt and pepper
- 400g yogurt
- 1 red onion
- 250g baby spinach
- 1 stick of celery
- 1-2 cloves of garlic
- 1-2 tablespoons olive oil
- 200g boiled chickpeas
- hot and sweet paprika

Eggplant Yogurt Salad, Sautéed Spinach and Crispy Chickpeas Recipe – RECIPE
Bake the eggplants in the oven first, then clean, drain and cool. Yogurt is drained through a fine sieve to remove liquid and become creamy.

Prepare other ingredients in the meantime. Wash the spinach, drain well, and fry lightly in a frying pan with olive oil. Add finely chopped celery stalks and 1-2 cloves of garlic, cut into rings. Season with salt and pepper.

Drain the chickpeas well from the can and fry them in a little olive oil sprinkled with salt, pepper, and paprika. Mix well so that it is evenly browned.
The hazelnuts are lightly fried in a frying pan, but without the use of oil or salt, making them even more crunchy.

Drain and cool the eggplant, then chop with a wooden knife as in the traditional eggplant salad recipe. Clean the red onion and chop it very finely. Mix with chopped eggplant. Add drained yogurt and mix all ingredients well.

Place the eggplant salad and yogurt on a serving plate. Sprinkle crispy chickpeas on top and top with sautéed spinach with celery. Hazelnuts are also scattered on top of it, and you can enjoy the crispy texture.
