Rădăuţa soup was created 40 years ago by Cornelia Dumitrescu. The name of the dish comes from the cook’s birthplace, Radauci, Suceava. The recipe was the famous belly soup, and I wanted to replace the beef belly with turkey meat.

For a savory dish, you’ll need 2 carrots, 2 egg yolks, 2 parsley roots, 5 cloves of garlic, 1 bunch of green parsley, 250 milliliters of heavy cream, 1 kilogram of chicken or turkey meat, 2 parsnip roots, and celery. 1 root of chives, the white part of the leek. Season with salt, pepper and vinegar. You will need a large pot to cook with 4 liters of water. The recipe is easy and doesn’t take long.

How to make radautsa soup

First, clean and wash the vegetables, then remove the garlic and cut into suitable cubes. Boil the meat in a large enough pot over medium heat. After boiling, you need to skim off the top foam with a spatula or skimmer. Cook until tender, then add the vegetables and season with salt. After simmering for 45-50 minutes, the ingredients are drained from the soup. The meat is deboned, cut into small pieces and stewed again.

Meanwhile, mix the two egg yolks and cream in a bowl until even. Pour a ladle of hot soup over it and mix again. It is recommended that the cream used has at least 20% fat content to prevent it from clumping. Remove the pan from the heat and let it cool for a while. After that, pour the egg yolk and fresh cream little by little into the soup and mix until smooth. Peel the garlic cloves, crush them and add them to the soup. Finely chop the greens and put them in the pot. Blend the vegetables and add them to the Radautsa soup to season the dish. The original recipe adds them, but you can serve the soup without them.
